The result of a collaboration with our friends at Nanobrasserie de l'Ermitage. Based on an idea that had germinated during a festival in Rome in 2018, we blended several brews of Saison de l'Ermite aged 1 and a half years in foudre, with a blend of 1, 2 and 3 year old lambics in which 5 forest fruits (blackcurrant, raspberry, red currant, wild blueberry and blackberry) were fermented. The final concentration is 170g of fruit per litre. The beer matured for almost 11 months in the bottle.
