Originally conceived as a sparkling version of his low-alcohol Pet Nat, Petit Coin de Paradis, but with zero alcohol. He experimented a lot and created a complex blend of herbs, citrus, ginger, apple and of course Gamay juice from his vineyard. He steeps the herbs at different temperatures in the juice for the right extraction and everything is blended before bottling and carbonation. It's unique and perfect for those not partaking, particularly lovely as an aperitif.
