Brewery Of The Week - 10% Off 6 Or More Added Automatically!

Yes, we're doing things a little differently this week with a double headliner to support the launch of our Strawberry & Kiwi Granita with Pastore and Faraway City the amped up version of our juicy session stunner with Time & Tide!
First, we head to Waterbeach, Cambridgeshire, the home of mixed fermentation and Sour specialists, Pastore, of which we've been long-time admirers, having had some of their very first brews through our doors.

Set up by homebrewing father and son team Chris and Ben Shepherd (Pastore in Italian) in 2019, Ben completed a Masters degree in brewing at the prestigious Heriot-Watt University where he aptly wrote his thesis on Brettanomyces (Brett).

In record timing they've taken the scene by storm, becoming renowned for their complex, juicy Session Sours, Pastry fun, and remarkable wild barrel-aged blends.

With our last collab tart treat brewed over two years, and with the Summer, and our eleventh Birthday in sight, we couldn’t look further than our sour soulmates, embarking on a trip to their rural home in mid-March for our third release together.

Keen to continue our lineage in tributes to soft drink staples (Lilt, Fanta Fruit Twist collabs coming before it) this is a riff on the cult favourite Tango Ice Blast (thanks Dom!). Uber-refreshing and deviously delicious this Granita (icey Italian dessert) ticks every box for Sour lovers.

Brewed to Pastore's exacting mixed ferm (using more than one yeast) standards this features a classic blend of wheat and pils malt with their house lactobacillus culture added, and fermented with a clean, tropical Kveik yeast before being dosed liberally with fruit puree.

Immediately bursting with yoghurty zingy fruit and sour tones our Strawberry & Kiwi Granita is simply irresistible! Sure, there's big tartness with their trademark spritzy, dry finish but the sweetness of the fruit combo here keeps things beautifully balanced.

Light and gluggable with a sherbet-like mouthfeel, this is not just a Kettle Sour but a mixed-ferm wonder that has complex acidity backing up that loveable fruit-forward juice. Some call it an Ice Blast, we call it a Granita. Whatever it is, it's bound to fly out so get stuck in while you can!

Of course, alongside our session slammer we have plenty of the good stuff from Pastore, including their classic Limone, and a trio of musical inspired sours featuring a tangy Baroque Gose, the vibrant, bratty strawberry banana bubblegum Electropop, and the luscious blackcurrant and apple Deep Purple!

By now you all probably know how huge fans of Time & Tide we are! Based just outside of Sandwich on the stunning Kent coast they've become cult heroes of ours, for their array of sluggable stalwarts, with a focus on juicy, yet superbly suppable hazy Pales, as well as a smattering of crispy Lagers and roasty-toasty Stouts.

Masters of flavour to volume brewing, we've tipped them for great things, and they've delivered time and time again. Are they the next big thing still? We think so!

Following years working together our seasonal SIPA stunner, Faraway Town, debuted back in April 2022 and we were absolutely blown away by the response to this beer, with the brewday a real bucket list moment for us.

And, with our Birthday on the horizon we thought we'd cook up something extra special, in an amped-up version of our classic, for what approaches DIPA levels of flavour in IPA party clothing.

Faraway City, here we come...

For the foundation of this incredibly nifty beer we opted for a malt bill packed with flaked, and torrefied oats and wheat alongside mashing in at a high temperature and fermenting with their house yeast, enabling us to create a full, mouthcoating, yet clean body, ideal for juicy, tropical hops to shine.

With that pillowy soft body, our classic combo sees Nelson lend vinous, zingy gooseberry, while Citra hops contribute sherberty peach and citrus goodness.

Finally, for this one-off Pale Ale version we added a whole heap of the industry-darling Nectaron for distinctive pineapple and saturated stone fruit fun. Still as remarkably drinkable as our OG 3.8% number this is a more multi-layered hop bomb, and straight hazy sunshine in a can at that.

As with Pastore, we have a full frothy line-up for Time & Tide including go to SIPA Spratwaffler, as well as its brand new AF sibling. Throw in crispy, moreish Helles Lighthouse Lager, plus dank IPA delight Little Urchin and there's a lot to love.

We absolutely cannot wait for you to try this delightful collab duo, from some of our absolute nearest and dearest, and we'll be sure to raise a glass or two today with these to celebrate eleven years going strong!
