A switch back to red grapes, and all that juicy berry and tannic intensity from the co-ferment stood out immediately. The joy was then putting on @orvillepeck and tasting combinations until the finished blend complimented the wild character of the grape skins.
Keeved cider, the co-ferment barrel, Chisel jersey and nehou for tannins and structure, and finally bramley to brighten it up. It’s rich with berries and cheers on the nose, sweet with apples and caramel on the palette and a wash with grippy tannins.
