Yves farms 10 ha of vines biodynamically with great success in the Bugey, a tiny appellation of only 500 ha. He makes elegant, precise and controlled wines from Pinot, Mondeuse, Altesse (Rousette) and Chardonnay. The geology of Bugey is similar to its neighbour, Savoie- fragmented parcels of vines planted in steep slopes above the valley floor. The sedimentary soils date back to a time when dinosaurs roamed and the climate was tropical.
This wine is a 'Pét-Nat' or Pétillant-Naturel, made by bottling wine before it has finished fermenting and allowing it to continue in the sealed bottle, trapping the CO2 produced and making the wine slightly fizzy.
